 1 cup cooked basmati rice
 1 can (5 ounces) tuna, drained
 ½ cup diced cucumber
 ½ cup diced tomatoes
 ¼ cup olive oil
 2 tbsp lemon juice
 Salt and pepper to taste

In a large bowl, combine the cooked rice, tuna, cucumber, and tomatoes.

Ingredient Notes:
