 2 courgettes, sliced lengthwise
 1 tbsp olive oil
 ½ cup crumbled feta cheese
 ¼ cup chopped fresh mint
 Salt and pepper to taste

Preheat your grill or grill pan to medium heat.

Brush the courgette slices with olive oil on both sides and season with salt and pepper.

Grill the courgette slices for about 3-4 minutes on each side, until tender and grill marks appear.

Remove the courgette from the grill and let it cool slightly.
