 1 large aubergine, sliced
 1 bell pepper, sliced
 2 tbsp olive oil
 Salt and pepper to taste
 Fresh basil leaves for garnish

Preheat your grill or grill pan.

Brush the aubergines and bell pepper slices with olive oil on both sides and season with salt and pepper.

Grill the veggies for about 3-4 minutes on each side, until tender and grill marks appear.

Arrange the grilled veggies on a plate, garnish with fresh basil leaves, and serve.

Ingredient Notes:

Bell Peppers - They are low FODMAP in small to moderate amounts. The recommended serving size is typically up to 75g (about 1/2 cup) of diced bell pepper.
