 1 whole chicken
 2 tbsp olive oil
 Juice of 1 lemon
 1 tbsp fresh rosemary leaves
 Salt and pepper to taste

Preheat your oven to 375°F (190°C).

Rinse the chicken and pat dry with paper towels.

Rub the chicken all over with the olive oil, lemon juice, rosemary, salt, and pepper.

Place the chicken in a roasting pan and roast for about 1 hour, or until the juices run clear when you cut between the leg and thigh.

Let the chicken rest for a few minutes before carving. Serve with your favourite low-FODMAP sides.
