 4 large eggs
 Salt and pepper to taste
 1 tbsp olive oil
 1 cup fresh baby spinach
 ¼ cup crumbled feta cheese

In a bowl, whisk together the eggs, salt, and pepper.

Heat the olive oil in a non-stick skillet over medium heat.

Add the spinach and cook until wilted.

Pour the eggs over the spinach and cook, stirring occasionally, until the eggs are set.

Sprinkle the feta cheese over the eggs and cook for another minute, until the cheese is slightly melted.

Ingredient Notes:

Feta cheese - Dairy products can be a source of lactose, which is a FODMAP. However, the fermentation process involved in making cheese reduces the lactose content. Feta cheese is generally considered low FODMAP in small amounts, around 40g per serving.

Baby Spinach - Unlike normal (adult?) spinach, this does contain a small amount of Fructan. Therefore, it’s important to only have 1 1/2 cups max per meal.
